Winemaking:  Biodynamic Chardonnay & Bacchus grapes were harvested by hand. Chardonnay grapes underwent direct press. Bacchus was macerated for 9 days.  Fermentation with indigenous yeast in old barrels. Aged here for a further 10 months before bottling with no filtration, fining or added sulphur.

Notes on the Winemaker:  Lucie and Jules grow grapes in Kent using organic and biodynamic farming practices (with certification to follow soon). Daniel and Nicola at Offbeat purchase many of these grapes to make their own wine with and Dan has spoken to us enthusiastically about the quality of fruit produced. This year Dan has made a wine for them bottled under the Ham Street label.
