Winemaking: Organic grapes were purchased from a neighbouring grower. They were harvested by hand and spent time on the skins before spontaneous fermentation with indigenous yeast. Aged for 11 months before being bottled with no fining. Due to some fragility with the grapes, a light filtration took place and a small amount of sulphur was added.

This Wine: A natural skin contact wine from the esteemed Binner domaine. Full of finesse and precision with a lovely intensity of stone fruit and floral aromas. This is superb value, punching well above its price point. Can work with or without food.

Notes on the Winemaker: For over two and a half centuries, the Binner family have been making wine in the Alsatian village of Ammerschwihr. Christian has been running the winery since 1999 and has helped develop a reputation for elegant and precise wines made with minimum intervention.
